🥦 Broccoli Almond Soup (PCOS & Diabetes Friendly)

Serves: 2 Ingredients

Ingredients :

Broccoli florets – 2 cups Ash gourd – ½–1 cup Moong dal – 2 tbsp (soaked & cooked)

Soaked peeled almonds – 10 Unsweetened almond milk – 1 cup or 200 ml

vegetable stock – as needed Salt – to taste Grated turmeric 1 tbsp

Grated ginger 1 tbsp

Black pepper powder – 1 tsp

Cinnamon powder – ½ tsp

Garlic – 1 clove

Olive oil – 1 tsp

Method :

  1. Steam broccoli and ash gourd until soft.

  2. Blend with moong dal, almonds, almond milk, and a little stock for a creamy texture.

  3. Add turmeric, ginger, black pepper, and cinnamon. Heat gently with optional garlic and olive oil.

  4. Serve warm.
